What is the procedure for quitting?

If you want to resign, you should do so in writing. In principle you must adhere to the agreed applicable* notice period. This is usually the notice period in your employment contract.
[Mind the agreed notice period could be invalid, rather I would say applicable]

Permanent Contract
If you have a permanent contract and you want to resign, then you must adhere to the notice period that is in your employment contract.

Temporary Contract
If you have a temporary contract and want to take interim dismissal, then it is only possible if you have made prior arrangements to be able to do so in the employment contract.

Resign during probation
During your trial period you can cancel the contract at any time. You must do this in writing.

Resignation by mutual consent
When resigning through mutual consent, speak with your employer that the employment is terminated [do your mean: you agree on the termination and the conditions thereof]. It is also wise to establish agreements on the resignation in writing.

Contract expires
Your contract may also 'legally' end. For example, a 1-year contract automatically ends when the year is over. It does not have to be terminated. There may also be a disbanding condition in the contract [rather  rather for the duration of certain circumstances or work /project]. For example, replacing an employee who is sick. If the sick employee is better, then your contract expires for that reason.
